I saw some really good looking ones earlier tonight in the commissary along with some regular beef ribs and I'm kind of kicking myself that I didn't grab them.

Because properly smoke brisket or pork spare ribs are 87x better.
Beef ribs are good when you want to change it up but that's about it. |

Brisket is cheaper around here. I love beef plate ribs. Brisket on a stick.

Beef short ribs have gross tasting fat. They completely disgust me. I love pork ribs though. I like brisket but have to remove all visible fat.

Pork is better.
My method for beef though is hot and fast for 1-2 hours, then a tight foil wrap to finish. I've never been able to keep them moist without wrapping them. |

I love brisket as much as anyone can.
The ribs are shorter to smoke and melt in your mouth like the best point. I've been smoking ribs lately and the only thing I can say is be judicious with the salt. They seem to concentrate the salt in the rub in a way that brisket doesn't. |

I didn’t smoke beef ribs yesterday because the only thing I had in the freezer was one slab of pork, so on the Traeger they went while I was off doing something else. Competition pellets with a pan of apple juice in the smoker. I like smoked meat off of the WSM better, but the Traeger doesn’t require any babysitting.

Couldn't find beef ribs yesterday, had to settle for prime brisket from Sam's. First time doing a brisket.
Coated with SPG last night, put on the smoker this morning. Will prolly do the crutch around 160. Will check for probe tender around 200. If I fuck it up, it'll be chili tomorrow. Win-win |

I have salmon in a brown sugar brine and boiling up a turkey brine now.
I would eat some brisket or short ribs though. |
