I also like Sweet Baby Ray's. I mix a little sauce 50/50 w cider vinegar and a touch of water to thin it a bit, perfect on bbq pork.

I saved so much money by getting that cheap grill and assembling it myself.  It works fine. 

Heck, my previous smoker/grill was one I took from my neihgbor’s garbage.  He was throwing it away, and I used it for another eight years.  

This one is a big step up!  

It does turn out some fine meat. I will say it is a bit more work than a quality smoker. Also it's a damned fuel hog being so thin.

I often do just one rack - yes, I am single.
But more often then not I'll do two just because I usually buy them when they are on sale.

Yum!  I did a 19lb brisket yesterday.  There's just a few slices left this afternoon.  13 hours on the smoker, 3 hours in a cooler, turned out great!

I use the Traeger 6 hour recipe with my own twist.

Remove the membrane, mix mustard, olive oil, soy sauce and honey into a paste, cover both sides with mix, sprinkle with a dry mix of salt, pepper, onion powder, garlic powder and brown sugar.
Into the Traeger for three hours on the smoke setting on the grill.
Up the temp to 220, put the ribs in a one time use aluminum pan, cover with a mix of apple juice, brown sugar, honey and a dry rub - (I like the Dillo Dust) and some Kick 'n Chicken seasoning, then pout apple juice until the juice is about a quarter of an inch in the pan. I'll drop in some sliced apples too.
Cover with foil, back in the Traeger for two hours.
After two hours I'll pull it out and put some of the pan drippings back over the ribs for a half hour on the grill uncovered.
I'll take some of the pan drippings and mix it with my favorite BBQ sauce, some brown sugar and honey and cover the ribs with the sauce.
Let it sit on the grill for another half hour until the sauce tightens up, off the grill and plate it.
I'll serve the apples that were in the pan with the ribs.

I recommend a vinegar based cole slaw, baked beans and French fries. I can give you a good recipe for the coleslaw.

I need to step up my rib game.  The last few racks of spares I've done always come out over cooked, even though I'm only doing them for around 5 hours.
