I started a 3 gallon batch yesterday.



9 lbs clover honey
9lbs strawberries
Cote De Blanc yeast.

It's fermenting well

I will add 6 more lbs strawberries for the secondary fermentation.

Updates will be made when needed.

Bubbles had dropped to 40 seconds so I racked and added the strawberry juice for secondary fermentation. It's bubbling fast again and looking good.

15 lbs Monarch Wildflower honey
Vintners Best Strawberry Wine mix
Cote des blanc yeast
Water

No heat, just mix and pitch.  Sitting in secondary, starting to clear.

I admit to being unsophisticated- didn’t feel like dealing with strawberries in raw form, so ease and price, mostly.  Upon receiving it, I will do otherwise next time.  Didn’t realize it had corn syrup in it.  But it is turning out well.

I would steer clear of the Vintners Best stuff.
The ingredients are, in order of amount

Corn Syrup
Apple Juice
Pear Juice
Strawberry Juice

I would recommend instead you check out Vintner's Harvest strawberry wine base. Ingredients: Oregon Strawberries.

Some people use glass marbles or pebbles to top up the carboy and reduce headspace.

Yes sir, It didn't take much water and this will age for at least 6 months. I don't think it will hurt anything.

It lowers the ABV and residual sweetness a little bit. But not a ton.

I tried making a strawberry mead, it didn't turn out great. I will try again sometime, but I think I'll be "cooking" the strawberries next time, then dosing with pectic enzyme when it's still warm. My strawberry kiwi mead is golden yellow. :/

This is the kind of thing I’ve toyed with wanting to try, but I never seem to get around to it....

I boil fresh berries in bottled spring water and use the juice.

Love me some mead.  I started wanting to try making it when I worked with a hobby beekeeper, but alas he left the state....
