Those that know - how's wild harvested duck compared to the stuff ya get at better Chinese restaurants? I'm guessing the farmed might be fatter, but I wonder about the flavor of the actual meat.

It took me 8 years to realize leaving the skin on (and that wonderful fat layer) makes a huge difference. Duck looks like a bird but cooks like a steak. And when you leave the skin and fat on, it’s like it’s naturally wrapped in bacon. |
