Manicotti shells stuffed with sausage and cheese, then wrapped in bacon.  I used sharp cheddar and pepper jack for the cheese (~4oz of each) and Jimmy Dean hot sausage.  Mixed in some Killer Hogs BBQ rub.  Used a jerky gun to fill the manicotti tubes.  Wrapped them in bacon. Dusted with Holy VooDoo rub.  Put them on the pellet grill at 230 for ~2 hours.  Kicked it up to 350 and glazed with bbq sauce.
