2 lbs of chopped brisket
1.5 lbs Velveeta 1 lb Quesadilla .5 lb Provolone .5 lb Mozzarella 4 roasted Poblanos 2 roasted Anaheims 5 roasted Jalapenos 1 can chicken broth .25 lbs of Queso Fresco 2 cans of Rotel tomatoes, 1 regular, 1 habanero. Combine ingredients and place on smoker at 275 for 45 minutes, stirring every 10 minutes. Add salt and black pepper to taste. Place back on smoker, reduce heat to keep warm and add smoke flavor. Damn it's delicious.

I discovered smoked queso earlier this year. I think I’ve done it every time i’ve fired up my smoker. I like the meat church recipe.
