I'm going to cook a recipe that calls for 13.5 pounds of pork butt, but I know I'm only going to buy maybe 3 pounds. How do I scale the marinade for this recipe? I'm afraid if I reduce it by the amount of actual meat that I have that it would reduce it too far. Here are the marinade ingredients.


  • 5 Guajillo Chilies

  • 4 Sour Orange Juice (Substitute with 3 Oranges and 1 lime)

  • 1/4 cup White Vinegar

  • 1 Cup Pineapple Juice

  • 5 Cloves of Garlic

  • 2 White Onions

  • 1 tbsp Cinnamon Powder

  • 1 tbsp White Pepper

  • 1 tbsp Black Pepper

  • 1 tbsp Dry Oregano

  • 1 tbsp Cumin

  • 4 tbsp Achiote Powder
