Right below your thread is the official red dead redemption thread to ask this question but okay. You have to go the the butchers mark in camp. Go to craft, and then satchels. You’re welcome.

Not sure if it's what you're thinking of, but each of the satchels has a certain additional task aside from providing the required pelts:

Tonics - Upgrade medicine wagon twice
Ingredients - Donate 5 animal carcasses
Kit - Donate 3 valuables
Provisions - Upgrade provisions wagon twice
Materials - Craft 3 recipes at the scout fire
Valuables - Donate $50
Legend of the East - Craft all other satchels

I don't recall having to do anything else for Pearson.
