I like Bob's red mill. We have tons and always do. Goodluck finding any now.

I've tried Caputo 00, never could get my hands on All Trumps.
My preferred flour after trying many is Bouncer. I get it from GFS. |

I had ordered my All Trumps from Weavers Country Market in Missouri a few years ago. I don't know if its stock or not but the prices look reasonable. You would probably have to call them.

Yup, the only place I buy my yeast. Once I open the bag I dump it in pint canning jars and freeze it. Lasts several years that way.When bread was hard to get a few weeks ago yeast and flour got hard to find. GFS still had the 2 lb bags of yeast. |

Got a 25# bag of All Trumps at GFS yesterday. Lots of flour in 25# and 50# bags. No yeast, though.

King Arthur. Bread or AP. Ap has slightly less protein and will be less chewy, but I has enough that it can do pizza. It has more than most ap.

Whole Foods here has gluten in stock. Just add a bit to AP flour, and you'll be good to go. Most goodness or lack thereof, comes from the cooking. Pizza's with great ingredients that has been cooked poorly, or by inexperienced, is worse than decent ingredients cooked properly.
King Arthur's bread flour is over-rated simply because it's over-priced on the retail shelve. |

I’ve been using Kyrol high protein flour with good results. Bought a hand crank mixer with dough hook and followed the recipe that came with it.
