After cooking dozens of packs of bacon in the oven I've learned that 30 minutes @ 350°, followed by 300° until it reaches the desired crispiness is best.  It gives the fat more time to render, and reduces the burnt edges.

For the second part I set the oven to 300° and open the door for a minute to let the temp go down.

If you lap the paper over the sides, most of the time the grease stays on the paper and you can dump it in your bacon grease bucket and the pan stays clean.

A lot of times I'll just put the bacon on a piece of Al foil with the edges folded up to keep the grease in.
Then I'll just toss it in the countertop toaster/oven - I hate heating the whole large oven range just for making a few strips of bacon.
Clean up is easy, and I pour the grease into my bacon grease container for cooking uses later.

I get worried when I start getting low on parchment paper. Costco sells a huge roll but I can't always find it. Reynolds from Walmart is good too.

If I let the grease cool and solidify, I can pick up the paper and throw it away without spilling even a drop. I don't have to wash the pan!

You don't need parchment paper. Just throw it on that pan and cook it. We've been doing that for years and the pan has ALWAYS came clean in the dishwasher.

Don't always use the rack, foil alone is such an easy clean up.

Yes!

I have been cooking 'cowboy style'.. cut in 2" lengths, load up a black iron pot (not skillet).. simmer... stir as often as necessary.. If sticks, you have too high heat and not stirring often enough.  If it is popping, heat is way too high..

Only cover with the lid between stirring if the wind is high... or keep dirt out.  Cook till done or just a little underdone if you are going to nuke it..

Drain on collander or paper towel.. cool grease till around 120 degrees, pour through paper lined collander into a bowl, then transfer to mason jar...

Keep the bacon in a paper lined baggie in fridge or freeze.. take as needed.. quick snack

Wastes bacon grease.  Bacon is best prepared in a cast iron implement and cooked in about 1” of bacon grease.  

Pro tip: when making tamales, use bacon grease in the tamale dough instead of Manteca.

I've done my bacon in the oven for a few years now.  Except I just put it on a cookie sheet, no paper or foil.  400° for about 14 mins (sometimes more, depends on the bacon).  After taking the bacon off, I tilt the pan and collect the grease in a little bowl, then toss it later.  Over the past few months, we've really been liking the Costco bacon.  It's cut big, cooks flat, consistently crispy, and yummy.

I buy thick butcher bacon. Parchment paper oven at 350 for 18 minutes.  400 for another 4 minutes.  I will never cook bacon in the microwave ever again.
