Warm weather is here and that means COWBOY CAVIAR.

With tortilla chips, as a side, or just by itself you can't go wrong.

The one ingredient I typically lack is blackeyed peas. As luck would have it I have about a half-dozen cans along with plenty of black beans so I'll be routinely enjoying this stuff.

I would make that and eat it by the pot full. It doesnt taste as good until its sat overnight in the fridge.

I would be picking out each little piece of cilantro and placing it in a little pile beside my plate.

Damn I can't remember the last time I had Cowboy Caviar.

Now I am hungry for it.

ETA: I will eat the cilantro that bc5000 does not want.

Do you carry the "Cilantro Allergy Gene"? (makes cilantro taste like you're eating soap)

@bc5000

My dad can't eat it for that reason. Whenever I make a dish that calls for fresh cilantro I use chopped parsley instead and those of us who don't carry the gene get cilantro on our individual servings.

Yeah I have the gene. One of my favorite Mexican restaurants would put pico de gallo on my plate and I would pick out each tiny piece of cilantro with my fork. Even a tiny piece would be so overpowering and ruin my bite of food.

Interestingly enough, I had that problem but no longer do. Now I love the stuff.

Cilantro = soap for me as well. I commend your willingness to make accommodations for us who can taste how nasty it is.
