Excellent question. I made 2x the recepie above and needed more room to brown the chops. As you know the chops should not touch each other in order for them to brown. Since I was making ten chops, I used a large SS skillet which could fit 5 at a time. In addition, the ss skillet is excellent for browning and fond development. After finishing, the chops in the ss skillet, I browned the onions then deglazed the skillet and put the drippings in the dutch oven.
The roux however was made with the bacon fond and bacon grease along with AP flour.
If I had a larger dutch oven or was making less, I would have used the dutch oven to brown the chops.
