I've read a a fair bit and it seems like most 30 cal bore sizes are .375 which seems pretty big.  I have a friend with one that has a bore size of 0.355 and it is really quiet and no issues with baffle strikes.  Why is it most guys go so big at .375?  0.355 seem plenty big?

No baffle strikes...yet.  

I'd trust what the mass manufacturers who spent millions in R&D are doing, instead of your buddy.  Leaving less than 0.1" of clearance around the diameter of the bullet isn't leaving any room for error.

I usually go .06 - .1 over bullet diameter depending on the host it's planned for.

Yes, tighter bores can sound quieter.
However, a tight bore can lead to bullet instability.
Also, you need to take into account total tolerance stacking, not just diametrical clearance at a single point.
