You've already got some good suggestions. The best value to me is an 9mm AR. Not the quietest or most powerful, but still reasonably powerful, low cost, and reliable firepower. Next would be a lever action in 44 Magnum, but loaded with 44 Special. It is pretty powerful even with subsonic ammo, and with full bore 44 Mag loads, it is a viable hunting rifle. This is a great choice, but just a little bit slower than a semi-auto. With 44 Special loads it will be the quietest of these 3, to the OP's original request.
An AR in 45 Auto is a nice balance of firepower and noise. I put one together with a 16" barrel, and with basic ball ammo it remains subsonic and fairly quiet. After I adjusted the buffer weight, mine has been completely reliable. Parts to assemble it are not as widely available as for a 9mm AR, but they are out there. Once you put it together though, you are set.
I assembled a New Frontier Armory 45 glock mag lower and BCG, with a Faxon barrel, and mine has been a great shooter. But honestly, I just use the 9mm more because the ammo is cheaper. The 45 runs perfectly, and would be my preference for self defense. There is no mistaking the impact of the 45 vs. the 9mm on the steel targets at my range. The 45 hits much louder and knocks the steel around more. I just happen to use my 9mm ARs a lot more because of the ammo cost. The 45 AR has a little more recoil, but really you are just feeling the push of the heavier buffer and bolt as it cycles.
I also have a 10" 45 Auto AR pistol. It is short and handy, and with my buddies suppressor, it is ridiculously quiet with cheap 230 grain ball. (edited to clarify my post)
