so if you screwed a 357 magnum barrel onto an old small ring mauser...

Maybe feed from a desert eagle mag...

But what about extraction on the rimmed case?

The Siamese Mausers were originally chambered in a rimmed cartridge, so it’s definitely possible.

To that end, you could probably use any number of military bolt actions for something like that. .357 doesn’t have the kind of pressures rifles of that era were intended for.

If you want a bolt action for rimmed pistol cartridges, look at the old Savage 340/Stevens 325 series of rifles.  I both 44 Magnum and 45 Colt will feed from the 30-30 magazine and the bolt (extractor) will require little if any modification.  So, really all you'd have to do is change the barrel.
