So this is how me and a Buddy spent our Saturday Afternoon



Too much of a PITA to re-size all the photos, so if your on 56K don't waste your time.  If your on high-speed, shouldn't be any reason to bitch

Yeah, it was a rough day...Drinkin beer and shooting the shit waiting for the food to finish...Then we ate, and it was hot as shit, so we got in the pool & swam & drank more beer...Then I took a 2 hr Power nap, and we went to a local festival where one of the local bands were playin, then followed that up with a bonfire & more beer...VERY satisfying weekend for sure.

Not long enough

They were at temp in 2   2 1/2 hrs...First time I've had them from a smoker, and I thought they were damn good.  The buddy (who does this a lot more often) said they cooked too fast, and weren't as good as the last time he did them.  They were'nt reallt tough, but they weren't falling off the bone either...I think the temp on the smoker was set to 180.  The meat just got to temp too quick.

yea, you can tell from the pics that they haven't gelatinized.

To get that gelatin, you have to do "slow and low"...and with water. 250 degrees for 6-8 hours for that amount of meat you have.

To convert the connective tissue to gelatin. Its technically called braising, smoking is that but with smoke added.

If they did gelatinize, then you wouldn't even need the store bought sauce. The gelatin and the dry rub mix together to make a sauce. I also collect the drippings with a piece of foil shaped like pan. Then I take those drippings when the cooking is over and separate the grease with a grease separator. Then I boil it in a pot to reduce into a thick BBQ sauce to die for.

You can do cold smoking, which isnt braising but you cant do that with the rig you have with that rig you have.

eta: at 250 degrees for 8 hours, they are "technically" overcooked. However, the fat will render out and replace the water that has steamed off.

They will be lip smakin good.

Yes Electric...Same principle as the old Ronco Rotisserie...."Set it and Forget it"

Your true smoker die hards probably only insist on charcoal/like grilling, but this one he has works just fine.

 We were at my Buddies.  That's HIS honda.  I have a Polaris 500 HO


Really though, now that Honda has the selectable auto/manual & I believe Independent rear suspension, I think I would like that over my Polaris.
