I just try to kill it quickly. Normally picking up the biggest rock around i can find and dropping it on the fish. Does the job. I can't taste the difference.

I like to brain the smaller fish with a knife poke but bigger ones take a rock or smashing it on a rock.  And I have sold more than one Snake Charmer (.410 single shot) to Halibut fishers who use them for kill shots on the barn doors.

I have an old wooden 870 butt stock I use to club them (hit then with the thin edge) I knife the small ones as well but if they are thrashing too hard, I club them.

Beat the bigger salmon if the flop about much but most of the time we just throw them in the bins.
