I just sold my car.
I haven't done it in a while, and was stupid and just signed it over to them, forgetting about a notary.
If me and the buyer both go to a notary at this point (after it has been signed) will they still notarize it?
If not, will they let me re-sign it?

They should, generate a bill of sale, if you haven't already. Take it along with your ID to the notary and you should be good

Most notaries are flexible folks. You should not have an issue unless you get a notary who is totally inflexible.
