good looking food,  had some jalapeno cheddar worsts (or whatever) on the grill and 3 molson goldens, while my mp was on my side, for lunch, AFTER i fondled my ar15 ( i need a teddy bear to point to it to show you were i touched it), while i was putting away newly acquired 22 ammo.  i did shave my beard this morning...

Chicken Cracklings






Dry out in fridge for a day, then season both sides with salt, pepper, smoked paprika, garlic powder, onion powder and a little thyme.


















Sandwich between two sheet pans lined with parchment paper, put a weight on top and bake.

















Mmmmmm...

Chicken Tacos





Slasa: Corn, sweet onion, tomato, cilantro, culantro, parsley, lime juice.



























The Chicken







Chop up leftover chicken meat in small cubes.

















Heat up saute pan. Saute diced onion and garlic in chicken fat. Add smoked chili powder, cumin, coriander, smoked paprika, cornstarch and s+p to meat. Add chicken stock and cook down until thick. Once "sauce" thickens add chicken meat, cover and remove from heat.

















Homemade pickled hot peppers.















Assemble and enjoy! (I like sour cream and green onion on top, or even better make a crema with buttermilk, cream and chipotle!)
