Thanks. Home last night . Fastest section discharge ever.

Interesting first night home . I slept in my daughters bed, she slept in my bed, my wife slept in the rocking chair and my son slept in his crib/wife’s arms.

Waiting on slide milling. I put a red dot on my sons Ruger 22/45, I’m really liking it. Went with the Holosun, mostly because it’s had lots of good reviews, 1/2 the price of an RMR, but also it has the same footprint as an RMR. Just incase I switch it out down the road.

Not sure if Conn is married, but he has kids. That single is strategically placed

BTW, that is the new Carbone's Prime in Rocky Hill.  Really beautiful place and great food.

The Happy Hour has a bunch of small plates at great prices but it's the shellfish to go for.  The oysters, cherrystones and littlenecks are $1 each and the huge shrimp are $2.50.   As you know, that is an amazing bargain if you like to eat them.  Oysters alone can be $3 to $5 bucks each.

I was just drooling over the menu. I have a colleague from NJ that when in town we always hit Carbone's with a couple other co-worker/friends. He is due to be here again in a couple weeks. We may have to try this new one.

I have a fair grasp of Spanish, and recognized it immediately as a notification of a recruiting event.

However, I am a bit confused on the venue.  Given the diverse nature of the CT population, with a large number of people from PR, why would the state police recruit from the Interamerican University at Ponce PR? And why thru Beacon Falls?

There is certainly nothing wrong with it, just seems unusual to someone who is looking in from the outside.

I am not familiar with the procedure either but in 2022 at the end of the current contract, over 350 troopers are said to retire to preserve their benefits.  That's over 30%.  Fiorthe first time ever, they make take LEOs on as troopers without them having gone to the CSP Academy.  They might be in trouble numbers wise.

Banh Mi (Vietnamese Sandwich)

Do Chau (Vietnamese Pickled Daikon and Carrots)
  • 1 part carrot julienned
  • 1 part daikon radish julienned
  • 1 cup water
  • 1/2 rice wine vinegar
  • 1/4 cup sugar
  • 1 Tablespoon salt
Let sit in jar for min 1 day, but up to month.

Thit Nuong (Vietnamese Grilled Pork)
  • 2 pounds pork sliced or beat thin
  • 1 large shallot
  • 4-5 garlic cloves
  • 1 oz fresh lemongrass
  • 1 tablespoon ginger
  • 1/4 cup raw sugar (or light brown or palm)
  • 1/2 tsp thai chili flake or to taste
  • 1/4 cup fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp neutral oil
Mix all veg into a paste. Stir in wet/dry ingredients to combine. Rub on meat and let sit min 1 hr or up to 18 hrs. When bring meat to room temp and wipe of excess paste. Grill over very hot charcoal until caramelized and charred on the outside (with thin meat and hot coals, this should take 3-5 min per side).

Baguette Sauce
  • 1/2 cup mayonnaise (or make your own)
  • 1/2 tbsp maple syrup
  • 1/2 tbsp Hoisin sauce
Mix thoroughly to combine.

Other items needed:
  • Vietnamese Baguette (try to find at Vietnamese bakery, but can sub out any chewy fluffy roll like Kaiser, Portuguese or hero roll).
  • English cucumber julienned
  • Cilantro
  • jalapeno thinly sliced (if you like a little heat)

Cut open bread most of, but not all the way, to make pocket. Sauce the bread and toast in oven at 400F for 5-10 minutes until it's warm through and edges turn golden. Insert warm pork on bottom, then cilantro, cucumber, pickled veggies and jalapeno. Enjoy.

My Outback XT spun a bearing a few weeks ago.

Local junkyards wanted 3k for a motor.  I said screw that, buying a JDM EJ20Y motor for 900.   The EJ20Y has several advantages over the blown up EJ255.  JDM comes with higher compression, twin scroll 4 to 2 header, slightly bigger turbo, dual variable valve timing and a tad more flowing intake manifold.  I'm not going to take the time and expense of wiring up the exhaust variable valve timing.  Maybe I would take the time if I was building a fast subaru, but I'm not.

With a tune, I should make the same horsepower but less torque.
