Ok so the longest blade you can carry is 3" in Illinois?
What do you guys/gals take when you go camping or hiking? Is it legal to have a fixed blade knife?

Seems like its just easier not to carry a fixed blade one and stay under 3".

You didn't read any of that dId you? U can carry lot of different knives as long as you don't intend to harm someone and/or commit a crime.

The act of carrying the knife itself is not included as an element of the Statute, it is what is known as an "aggravating factor"... and of course your local jurisdiction may have ordinances addressing blade length.

Can I carry a hammer?  If so, is there any size/weight hammer that is restricted?  I'd carry it for utility purposes.  Opening cans, tire knocking (checking for low pressure), hammering nails.

At what size does a hammer become a "dangerous hammer"?

That's about how dumb any knife law is.
