I may take a one month job in NM as a firearms instructor.  NM may require me to pay income tax on it.  Will CO give me a tax credit or will they want me to pay income tax too?  I don't want to pay double taxes and if such is the case, I'm not likely to take the job.

Yeah, you'll file taxes in both states.  You have to claim the money earned in each state on that state's return.  It's not overly complicated, just additional steps in the forms.
