I have a Remington 700 hunting rifle in a pretty wood stock. I'm wanting to put it in a hogue pillar bed stock for weather and field use   There's lots of these stocks for sale cheap because folks take them off of the 700 AAC MODLELA BUT THEY ARE ALL CHANNELED FOR HEAVY BARRELS AND MINE Is a medium contour. Any issues you ca think of ?

Sorry for caps lock.

You could glass bed it to fill in the empty space. Take quite a bit of glass though. Main issue is the gap which is cosmetic, but if you use it to hunt, could catch debris between the stock and barrel.
