What's the going rate on a good condition IMI Mini UZI these days? I've had a hankering for a Mini UZI recently and want to make sure I don't over spend on something.

$1100-1200 , add 14k to that for the class 3 version

If it's an original IMI Mini UZI it's easily worth over $2K. There's one for sale on GunBroker for $2500, seems like a good price. Another guy wants $3949... There's also a Vector Mini for $1739, but it's not an original IMI of course.

SBR or FA?

I sold my FA mini Uzi about 12 months ago for $12,000.  Not top dollar, but Rueben M. made it very easy and I was in a hurry.  I had an investment opportunity and need to raise some cash in a hurry.  Figure I did ok, since I had purchased it for $5000 and shot it a bunch.  It was my first NFA item.  Still kind of stings when I think about selling it.  I just bought a 5.5" 9mm upper for my M16, though, so therapy is on the way.

Then I think that for 2k plus for an UZI, I can purchase a Zenith MP5 clone. Idk its tough to decide sometimes on these things.

You can get the new Uzi Pro for $1100 with a side folding brace or without.  Much better than the old Uzis.  Top rail, side charging handle, better sights, and better build quality/finish.

I'll go for a real IMI Mini UZI over the Vector. The rear of the receivers on the Vectors look like a hack job gone wrong.

A real deal IMI Mini with case, accessories and papers will set you back 2500 to 3000, depending on condition.
