I bought my wife this knife years ago and we don't know anything about it.

Does anyone recognize the markings?

It appears to be a high carbon content steel. It is very difficult to get a good edge on it, but once it's there man is it a good knife.

I'm half thinking it's China made high end junk but I do like it.

The shape is indicative of what's known as a Deba knife.  Mine is made in Osaka Japan, I don't recognize the markings.

Thanks for the reply. The cutlery shop I bought it from said it was designed for breaking down fish.

As far as I understand, there  is no such thing as a "sushi knife".

The deba is used to do what we would call "butcher" the fish.

The Yanagiba is used to prepare fish for sashimi and sushi, but I have never seen it called a sushi knife, and it is nothing like a deba.
