What did you use to sharpen them?

I have tried convexing a few knives on a mouse pad and sandpaper.

I must be doing something wrong, because they are almost butterknife dull, very shiny, but dull.

A few passes on the crok sticks and they are very sharp after, but just sandpaper and a strop, I cant get it.

You may be putting too much pressure on the blade or your angle may be too steep. Maybe both.
