I'm looking for a 10.5 or 11.5 Colt-pattern 9mm upper to float between my M16 and my SBR AR. Are they all pretty much the same or is there a reason to go with one over the other?

I previously had a Model 1 Sales 9mm upper on my SBR and it was great, but it needed the 9mm hammer and I'm looking for a factory ramped bolt that won't need to be modified for an M16.

Just a heads up on shooting 9mm with your M-16. I was considering the same thing, I was not aware of the added stress shooting 9mm does to the frame, here is a thread to look at:

Don't buy a blowback 9mm and this isn't a concern.  Look into one of Ron Williams DI 9mm's.  Slower cyclic rate, they run cleaner, better suppressed, and you don't have to babysit another buffer/spring each time you want to shoot it.

You have to be a reloaded for his 9mm upper sadly. Factory ammo is too dirty to run in his DI upper.
