A few weeks ago I bought a cheap Anderson lower from AIM for no reason other than just because. What should I build it into?  I only have one other AR (kinda), form 1 is pending for a 10.5" SBR.  I've never put an AR together from a stripped lower before so it'll be a learning experience.  Should I go the 9mm SBR direction (with suppressor in the future)? Some type of scoped DMR setup?  A caliber other than 5.56?

A4, with an ACOG.  Like a DMR rifle, as someone said.  Or you could go all out and do a SAM-R / SDM-R rifle.  I'm just telling you what I'd like, so....  

A recce is a good thing too.

A pistol lower is what you use for your SBR upper when travelling out of state to cut down on paperwork.

True. However there are some states that do not allow NFA / SBR's but a pistol Is legal.

9mm SBR.  Mines 7.5 inch with suppressor on the way.  KAK pistol hider on it for now just to get out to the end of the APEX handguard.  Tons of fun.

No slight intended, I'm all for any 20" AR.  I only have a A2 model. But looking to add at least a dedicated NM A2 for hipower and I'd like to add in a DMR style/A4 to somewhat complete my 20" collection.

While the 20-inch A-2 is always a great choice, I find I really prefer the 16-inch pencil barrel for all practical purposes, such as the Colt 6720. This will not be a lot different from your SBR, but you will get more effective velocity out of a 5.56 with those extra inches . In my humble opinion, 16 inches is the right answer. If you think you will do a lot of target work, and you enjoy that, then the 20-inch with a very good barrel, a geiselle trigger and good optics will put you in the zone.
