Im going to mount one of my PVS-14s behind an EoTech. Which eye cup works best for this?

In a short answer, any one you like. I use a shuttered to keep the light escape at a minimum, but it's just a matter of preference and your eye relief. Shuttered requires it to be closer to the eyeball.

Ok thanks, that's what I ordered, but then got concerned about it staying open when shooting from awakward positions when coyote hunting.

You can always easily switch to the open version, if the shuttered doesn't work for you. I keep both on hand as they are inexpensive,

I use the standard eyecup, a Wilcox Amber Filter, or sometimes nothing at all - for the reason you mentioned. I do not prefer the shutter.
