If I had to guess, the main reason the shots sound different from what you hear in person is the built-in high-pass filter and limited dynamic range/clipping of the iPhone's internal microphone.
Another good example of this phenomenon is the audio from the video below. In this video, the microphone on the GoPro makes this unsuppressed 12-gauge shotgun sound like something out of a Transformers movie:
