I just traded for a 6" colt trooper V in 357
It came with pacmar grips that I am happy with
It came with original wood grips that are in good condition
except the "varnish" coating is flaking off.  Probably 85% left.
Question is: would it be better to leave the grips as-is or attempt to
refinish them? If you were buying a revolver would you prefer
original finish grips or refinished?

What is the condition of the metal on the revolver? Do the grips bring the gun down or do they match the wear on the Colt? If they match, leave them alone. If they make the gun look bad, refinish.

If you plan to re-sell, I'd leave them as is.  If it's a shooter you're going to keep, then refinish.  I have a Python that came with grips in the same condition.  I applied paint stripper and used a tooth brush to remove the old finish.  Hand rubbed Tru-Oil into the wood about 6 or so times.  I'm very happy with the results.  Recommend you protect the medallion with tape during stripping and refinishing.

Recutting checkering is a tedious job.  I did it once on an old rifle and decided it was better to buy a new one than ever go through it again.

Put them in a drawer and leave them be.
Need pics of your Colt just because some of Colt fans like pics of old Colt revolvers.
