How does one know if lower bought as pistol didn't come off rifle? Further, what if the manufacturer is defunct?

Buy new stripped. Otherwise you wouldn't know.

A little research into the brand of lower can go a long ways.  If you find out it is a company that only sells them as complete rifles then you have to be concerned.  If it is a company that mainly sells stripped lowers or only complete lowers than there is zero reason to be concerned.
