I am one of the guys who likes trimming his own meat, makes his own rubs, marinades, and sauces (when appropriate, not everything needs sauce) for BBQ. I bring in oak/pecan/mesquite half a ton at a time (much to the dismay of my wife. I turn up my nose at electric smokers and trays of wood chips on outdoor gas stoves. For me, BBQ is about fire, wood smoke, low temps, and meat. I don't apologize for it, and occasionally I manage to produce pretty good BBQ.
Last weekend I got myself in a bind and had to get some ribs (remedial BBQ) on in a hurry between kid sports. "That LaRue character keeps sending me bottles of rub - what the hell, I'll use that", I said. Six hours later I pulled my ribs out of the pit. One firm shake would separate the meat from the bone, and the meat was pretty damned good.
I still would rather make my own rub, but Dillo Dust works pretty good.
