I love to cook, and 95% of the time I use a Chef's Knife to cut meat and chop vegetables.  Over the years, I've always used the cheap knifes 8" Chef's Knifes you can get some Target or Walmart for under $15-$20.  One of the things I always fight with them is trying to get them sharp, and keep them sharp.  I use my Lansky sharpening setup on them, and even through I can get my Benchmsade EDC knife razor sharp, then cheap chef's knifes just don't seem to ever get sharp. When I get the edges down to where it should be, the steel will start chipping and flaking off of the knife.  I've finally had it....I want a nice chef's knife made from good steel that will be easy to get sharp, and will hold it's edge. Something around 8"-10" should be perfect.

What would you guys suggest if I wanted one under $50?  What about under $100?  $150 is my max, but if I can find something under $100, that will work also.

Any suggestions would be great!!

My Cold Steel kitchen knives have been awesome.

There are no videos of them hacking through mannequins, buckets of water, or pigs heads but they are great knives.

These looks interesting also.  I guess when it all comes down to it, the steel that it's made out of is what matters...right?

I use the hell out of a Forshner Chinese style cleaver. Swiss steel, inexpensive, razor sharp after a few swipes on a steel. Serves as a scoop to move stuff off the cutting board.
It can't bone a chicken, but it does about 87% of cutting chores for me.
Along with a good chef's knife, you would have almost all cutting jobs covered.

My wife bought me this, and I kinda rolled my eyes at first. It has been amazing for keeping an edge. The balance is right, and the grip is good. I won't even let anyone else use it. Ive since bought three more of their knives.

Kitchenaid Professional chef knife @ amazon

Very good knife and amazon has a much better price than anyone else.

ETA: Currently $30 @ Amazon, Ebay has them for $67 others go up to ~$100. This is because of the way that the amazon pricing algorithm works with these knives for some reason, they always fall a long way down before going back up again.

I have a set of wustof tridents I purchased 37 years ago.  Use the chef knife almost daily.  Only have to sharpen a couple times a year.  But I am adamant about always using a cutt8ng board and no dishwasher.   My kids used to hate me when I got after them for cutting on a plate.  That's what the cheap knives are for.

Thanks for reminding me about these.  I picked up the slicer a few months ago and it is a great knife for the price so I'm grabbing a chefs knife now that they are back down in price.  Here's the historic price graph

Global is my pick for overall value in a lifetime chef's knife.  In fact I have that very knife and use it often.

Shun is my favorite maker but demands a bit higher premium.  (My daily dicers)

+1  Compare the Rockwell C hardness.   That's what gives you edge retention.

The core steel has a 60° Rockwell Hardness.

That Victorinox 8-in only has a hardness of maybe 55 Rc, which for me won't hold an edge, and is $35 plus $5 shipping and $3 tax = $43 for me.  The equiv Tojiro DP (210mm ~ 8-in) is only $65 SHIPPED.

http://www.chefknivestogo.com/tojiro-dp-f-8081.html

You're better off with a 240mm (9-in) chef knife however.  That is the standard size for most jobs and most versatility.

http://www.chefknivestogo.com/todpchkn24.html

Wusthof claims to be 58 Rc but costs $99 for the 8-in before shipping and tax, which is too expensive and not hard enough.

https://www.amazon.com/Wusthof-Classic-8-Inch-Cooks-Knife/dp/B00009ZK08

So get the (most useful size) 240mm Tojiro DP for $75 shipped and you'll be happy for life.
