I love to cook, and 95% of the time I use a Chef's Knife to cut meat and chop vegetables. Over the years, I've always used the cheap knifes 8" Chef's Knifes you can get some Target or Walmart for under $15-$20. One of the things I always fight with them is trying to get them sharp, and keep them sharp. I use my Lansky sharpening setup on them, and even through I can get my Benchmsade EDC knife razor sharp, then cheap chef's knifes just don't seem to ever get sharp. When I get the edges down to where it should be, the steel will start chipping and flaking off of the knife. I've finally had it....I want a nice chef's knife made from good steel that will be easy to get sharp, and will hold it's edge. Something around 8"-10" should be perfect.
What would you guys suggest if I wanted one under $50? What about under $100? $150 is my max, but if I can find something under $100, that will work also. Any suggestions would be great!! |

My Cold Steel kitchen knives have been awesome.
There are no videos of them hacking through mannequins, buckets of water, or pigs heads but they are great knives. |

OP, I bought this set a few years back and I found it at a great price. If you buy stuff on Ebay this is a good deal, everywhere else its 200 bucks.

I use the hell out of a Forshner Chinese style cleaver. Swiss steel, inexpensive, razor sharp after a few swipes on a steel. Serves as a scoop to move stuff off the cutting board.
It can't bone a chicken, but it does about 87% of cutting chores for me. Along with a good chef's knife, you would have almost all cutting jobs covered. |

My wife bought me this, and I kinda rolled my eyes at first. It has been amazing for keeping an edge. The balance is right, and the grip is good. I won't even let anyone else use it. Ive since bought three more of their knives.

Very good knife and amazon has a much better price than anyone else. ETA: Currently $30 @ Amazon, Ebay has them for $67 others go up to ~$100. This is because of the way that the amazon pricing algorithm works with these knives for some reason, they always fall a long way down before going back up again. |

I have a set of wustof tridents I purchased 37 years ago. Use the chef knife almost daily. Only have to sharpen a couple times a year. But I am adamant about always using a cutt8ng board and no dishwasher. My kids used to hate me when I got after them for cutting on a plate. That's what the cheap knives are for.

Wusthof, Henckels, Forschner, and F. Dick all make good knives. Professional quality and Solingen steel.

The core steel has a 60° Rockwell Hardness. That Victorinox 8-in only has a hardness of maybe 55 Rc, which for me won't hold an edge, and is $35 plus $5 shipping and $3 tax = $43 for me. We use Wusthof as well......however all the good knives are in storage/shipment so the Mora kniv has been doing a hell of a lot of cooking recently in the Temp Quarters

Anthony Bourdain talked about Chef's knives in his book. Said the expensive ones were a waste of money by a Global. Did so, awesome knife holds an edge forever and when needs sharpened takes a razor edge in just a few minutes on a stone.

If you aren't some kind of "knife snob" (sounds like you aren't), and just want a good sharp knife, go to Harbor Freight and load up on their ceramic knives. They come in various sizes, are sharp as a razor blade, and work great for all kitchen duties. For about $8 each you just throw them away after years of hard use. It's really nice you can push them down onto a hard surface, or even hack on bone, and not do anything to the edge. I love them for my wife, as she is hard on knife edges.

Read reviews at Amazon. We use Global knives. Very thin edge. Easy to sharpen and stays that way if you don't abuse the knife. Say ouch once.

Been happy with my fifteen year old four star (german made) henckels.
Chef's knife, 3"paring knife, and a carving knife takes care of 97% of my kitchen knife needs. |
