I hear these yahoos say "I want a deer for their freezer". I guess there could be many interpretations.  Usually I see some people shoot a nasty ass "8 pointer" that already stinks, ride all over the county showing  aunt bubba while it rots more, take it to a processor where it "aged" and rots more, pick it up two weeks later frozen, stick it in the freezer where it rots more and gets freezer burned, then 2 years throws it out in the yard where his damned old shiteater will not even eat it. Knowing all along his wife has no idea how to cook it.

I passed on a fork and 2 spikes. One of the guys we stay with asked at what point in the week would I take it and I said never. If people would stop shooting baby bucks they would be more mature ones to shoot. I think you shouldn't be able to shoot anything that's not at least outside the ears.

OP describing self?

The only "stinky" deer I ever had was way back when I just started hunting and did not have the proper skills to gut n' cut and process the meat properly, along with proper aging.

Now all of my venison is a wonderful delicacy ,  and yes, I like having a deer (or two or three) in the freezer for pulling out in rotation with store bought meat.

And a real man doesn't depend on his wife to cook his meat.

I just can't sit still long enough, or have enough time to big buck hunt.

I love filling up the freezer too, but I would never use the argument of having to feed the family, people that do that are stupid.

I could easily spend the same amount of time at work as I did in the treestand, and time spent processing and just go buy packaged beef at the butcher.

Meh, I don't see the appeal of it. Sure it's fun one someone gets something with a decent rack, but putting antler restrictions in place would tank the conservation aspect of it, no one would be buying licenses.

I have said in the past though that  every 5-10 years they should do a antlerless only season, our doe to buck ratio is way out of whack.

that is how the majority of our county's in Texas are. Antler restrictions limit you to (1) one buck of 13" or greater spread (Outside the ears) and one Spike. Our max is 3 bucks via tags a season.

ETA: Some counties allow doe's to be taken from opening season to the end of Thanksgiving weekend and some only allow the taking of doe from Thanksgiving day to the end of the weekend only.

So sick of people complaining about what deer people shoot, what weapon they used to shoot it, who processed the deer, what cuts the deer was processed into, etc.  If you want to hunt, hunt.  If you want to shoot a doe, buck, button buck, monster, yearling, who CARES?

Me too. I want a head for the wall, but I only want one. I have a lot of years of hunting left in me, eventually that first deer will be a big buck. Until then I'm happy with the first legal animal that comes in range.

I've had other people say that to me.  We've always just done it that way because that's the way we were taught.  I am going to try hind legs high next year on one of them to see if it is really that much easier to butcher and skin.

I like hind legs because I feel it's easier to process them, get all done and you have to quarters left on the hanger, take them over the meat table, saw the legs off and done. Always seems easier to skin them that way too.

I have to say that hanging head-up sure hasn't hindered us in any way.  I have a sink in my shop, so we can rinse off any hair that gets on the quarters while skinning before we bone it out.

I've skinned and quartered 150+ pound deer by myself with the setup shown in well under an hour, and it's a lot quicker when there's two of us.

Ha....

I processed my last doe right there in camp. Less than an hour after it died it was in baggies in the cooler.

Steaks, roasts, and stew meat. Separated and ready for the freezer and I was back in my stand for the afternoon hunt.

OP- do you go to the grocery store and spend $200 on meat and then waste it? Then why would you think we do that?
Cause meat is fucking expensive and wasting it is not high on anyone's list.

Whatever the subject there's always folks who will denigrate others who don't do it their way.  I hunt for meat and trophy hunt.  I hunt for meat because venison is the most healthy available meat for me.  Since I get to spend a lot of time hunting, mostly with crossbow, my standard for a trophy is higher than most.  I don't begrudge the guy who has a limited time to hunt taking a smaller buck than I would shoot.  It would be nice if nobody would shoot anything less than 3 1/2 year old bucks but if that were the case many would never shoot a buck.  I spend a lot of time in the woods and know enough about hunting that in the course of the season I'm likely going to get an opportunity to have a  140+ class buck on the ground so that's my standard.  It's a personal thing for me, I take pleasure in spending time out in nature and satisfaction when I get a nice buck.

Not sure of the reason for the hostility toward
hunters today here on GD.


Earlier, it was duck hunters; now deer hunters.







I take one or two deer every season. I hunt


ducks and geese as well....and yes, the meat


goes into the freezer.







After that, it goes into the oven, skillet, or stewpot


and helps feed my family.







I am not poor. I am also not lazy. I am willing


to invest the early hours and the long days to be successful.







One of these will be in my freezer by next week. Since venison


is the only red meat I eat, I will probably kill another one


before the season ends.







A whole lot of folks here have no idea what they're missing; and I suspect,


never will.  Their loss.

My buddy gave me some elk and deer meat. Ten or eleven pounds of it. Man that stuff was great.

I really wish my son was in better shape so I could hunt. I keep buying points in four different states thinking next year will be better and I'll hunt. But when it comes time to apply for tags, there is no way I could leave everything to my wife.

I hang head up so that any blood will drain out, rather than collect in the chest cavity.

I have heard that a plus to hanging head-down is that if you are leaving the deer out overnight, camping or even in your backyard, the hindquarters are in the air and less vulnerable if dogs or a bear find your deer.

Nowadays my deer just lays horizontally in my hitch hauler until it gets to my processing guy.

Yeah, it is nasty if you leave one hanging for a few days then cut the head off to congealed black blood.

I usually process mine before they even have time to cool though, so it's a non-issue. Even if we don't get them processed I will at least it get skinned, quartered and washed and sitting on the meat table with plastic over for the next day.

You're doing it wrong.

Shoot the youngest, tastiest animals you can find. Fuck shooting some old ass grisly buck encased in almost 2" of fat. Give me tender tasty meat.

The up-down thing has been done to death.  I plan on trying the head-down way just to see if it is easier, but damn, it isn't like skinning and quartering one hanging head-up is difficult.

As for shooting them "too early," even when they get 4.5 years old or older, the racks are not impressive where I hunt.  This one was a tad over 200 pounds field dressed with 10-points.  Not an impressive rack



This one was almost 200 dressed (for reference, I am 6-1) and again, not a monster rack.



You don't eat the antlers.
