Need to clean some neglected spots in the kitchen where years of oil residue from cooking are.
409, Simple Green,???
This stuff is real sticky and gummy, so I don't know what to use.

Goo Gone.

It's basically orange oil. Works great for cleaning that stuff.

TSP (trisodium phosphate). I just had to do that, OP, get TSP. Its in the paint section at Lowes, I think. I've never seen grease come off so easily.

+1 Just painted some cabinets and it was awesome at removing years of caked on grease. Be careful using it on metal or painted surfaces as it can degloss and soften some paint. Its great if you plan on painting a surface as it helps give it some tooth. Bonus is it's cheap and a little goes a long way.

A scrubby pad and a slurry of powdered Cascade and water.  It's amazing on that kind of old grease.

I came here to say "Fire", but it appears I've been beat.

In my experience... degreaser, a green scrubbie pad, and lots of time and effort is the most effective way.

Personally, I've used gasoline and nail polish remover. Gasoline is the cheapest. BUT both are extremely flammable. You have to be extremely careful and use the absolute minimum, and have good ventilation and no open flames nearby such as pilot light. And of course peroperly disposed of the towels & rag etc.

Goo-gone is mainly Napatha, like WD-40 or zippo lighter fluid.

Mix some bleach with it and it's magical how easily old grease and dirt comes off.
