View Quote the bacon shot was just after throwing it in. it was hot enough to get a lot of fond from the bacon and sausage, but yeah, I should have done the chicken in batches. it's that rotten bastard corporate chicken that is "15% salt water solution" released too much liquid and took up the bacon/ sausage fond. I did let the chicken go until the water evaporated and got a some browning on it, but yeah, could have taken it further. I should have let the onions go a bit longer too but people were in a hurry to eat since I got a late start cooking. |

View Quote Correct, Jambalaya is a poor cajun/creole dish thats been made with rat, nutria, gator, snake, whatever happened to be available. And tomato is fine. I like to put it in sometimes--you can actually add some tomato paste when toasting the rice to make the Jambalaya more rich, just don't over do it. |
