Perhaps this is not code but just either good practice or common practice. |

Best bacon is somewhere in the middle. The fat has semi-crisped, so that it's like biting into little crisp walled cells of juicy, bacony goodness.

I am a firm believer in the "perfect bacon zone" bacon travels through this sweet spot quickly so you have to be ready But there is a moment that you can achieve flavorful bacon perfection without having to endure the wet rawhide-eske gnawing, or that dry old char-shard crumbling. Lightly crisp, nicely browned, you can hold it upright but it still has just a little give. Yeah that's the bacon I like. |

The key to great bacon is taking it out of the skillet before it's truly done. It will continue cooking for about 20 or 30 seconds.
