I'm not a snob, but a good steak is like a piece of heaven. It takes more than just the cooking time to make a good steak. It is an art. Medium rare is my choice, however I still had great steaks that were a little more done.

After being raised in a household where all steaks were cooked well done... Rare, or don't even bother. View Quote My mom burns everything... When it's smokin' it's cooking'. When it's black, she's dun. My wife's family is the same way. When we got married and I started cooking meat, I started cooking it the way mother earth and God intended it to be. |

IOW, it's a whole bunch of flavor and juice that you're not getting. it's a bit like shotgunning a really expensive beer, or pouring diet coke into a nice single malt scotch. it's your palate and your money, so go with what you like best. but you might try med rare on fattier cuts. this is coming from a guy who only ate rare steak until a chef sat me down and made me taste the difference. |
