When I lived in the south I used to love biscuits and gravy for breakfast. They don't make it up here and I wanted to do a homemade batch for breakfast this weekend.
Anybody have a good recipe so I don't have to pluck a random recipe off the internet? Thanks |

It is done here. I don't eat breakfast much but still have it from time to time.. It is quite tasty

You don't need a recipe.
1 lbs breakfast sausage browned. Don't drain. Add 1/2 cup flour, stir to combine, add 4 cups whole milk (more or less depending how thick or thin you want), salt and fresh ground pepper to taste. Make lard biscuits. |

Fry breakfast sausage.
Remove sausage patties. Brown flour in leftover grease. Add milk. Crumble a patty in your gravy and pepper to taste. It's not very hard, but remember to stir the gray while cooking and to add the milk slowly. Also, do not put flour in after the milk. |

Don't listen to the posters who will give gravy or biscuits, but not both.
The better homes and gardens cookbook has the best basic biscuit recipe. If you don't know how to make gravy you are screwed. A roux, milk, and suasage or bacon, it's pretty straightfoward. |

I would suggest adding your flour a tablespoon or so at a time as well. Also... Maybe 1/3 cup, but it's really up to personal taste on thickness for how much you add. (I do 1 tbsp per cup of milk)... If I can find one that's in a freedom loving state, I would set up a diner and make millions. I don't understand how there can be places in America that don't have biscuits and gravy. It's just not right. |

I don't like most canned, frozen, or packet breakfast gravies (Bob Evan's is absolutely vile), but your standard pop n bake biscuit really isn't the end of the world. The cold bagged junk in the bread isle is terrible, don't get me wrong, but if Pillsbury makes the worst biscuit your palate has ever had the displeasure of hosting, you lead a blessed, sheltered life and I truly envy you who have never been exposed to the true horrors this world contains. EDIT: Also, use a sifter for the flour. Really, it makes it like a gajillion times easier. |

Sams Club sells a powdered pepper-gravy that is super easy to make. It is thick and rich. You can easily add sausage or bacon to it to kick it up a notch. Nice thing is the box makes many full meals worth of gravy. It is a good item to keep in the cupboard.

Lard Biscuit Recipie An old fashion soup can (not pop-top kind they have a lip, the kind you use a can opener on) makes a handy biscuit cutter. |

I'm gonna have to disagree with the guys saying it's so easy. It's not, if you want good gravy with no lumps.
It's not hard but there is a learning curve and some tricks of the trade. Making it with the sausage crumbled in the pan makes it easier because the flour coats the sausage bits and you're less likely to get lumps (basically little dumplings that, once they form is damned hard to get rid of them. Not that you can't eat it like that. ) We do prefer bacon gravy but either is good. The 1/4 cup four to 2 cups milk is about right. I tend to make it a little thicker at 1/3 cup four. When making bacon gravy, remove the bacon, unlike the sausage. Bacon will get limp on you. Be sure to brown the flour in the grease well or it'll taste like raw flour. Not a "brick roux" but more than a couple minutes. Reduce your heat when you're adding the milk (or half and half or cream. There's nothing wrong with whole milk). Add it a very little at a time at the beginning. Let it form almost a paste. Don't add enough to form lumps that can be whisked or mashed out with your spoon. It might take a couple tries to get the hang of this, most important step. I've seen people add it quicker and I don't see how they don't get lumps. The above, careful process works well for me. You have to bring it to a boil before you know how thick it's gonna be. You can always add more milk. Stir or whisk often. Salt and lots of fresh cracked black pepper is traditional. The recipe on the side of the Bisquick box does just fine. Drop or rolled biscuits serve fine. Biscuits and gravy are a sin to serve without eggs over medium. The yolk mixes with the gravy to make something greater than the sum of its parts. Delicious. Layered: biscuit, egg, gravy, crumbled bacon. The wife likes shredded cheese on top of that. I prefer some cayenne. Next time we can talk about ham, eggs, biscuits and red eye gravy. |

My wife makes the absolute best biscuits and gravy, from scratch. Many time this is more for dinner than breakfast. I would invite you over but I don't share well.
In my opinion you have to use scratch biscuits and not the canned stuff. |
