I've noticed a few shows like Everybody Loves Raymond and The Closer - that were "Included" a few days ago are now $1.99 per episode. Even the ones I've already watched.

I'm knida new to Prime so what gives?

They add and remove shows and movies from prime frequently. Netflix does the same thing.

Yep, pretty common.  People just don't notice it as much on Netflix because once it it gone, it is gone.  On Amazon, once it is no longer Prime, it is still there, but with a price on it.

Amazon Prime's TV and Movie selection sucks balls.  Best selection on earth for Renting and Viewing online though, which is their saving grace.
Netflix has the best selection of Series and Documentaries, Hands down.
HBOGO has the best movie selection, and they update it with great stuff every month.
Shotime Anytime - Has 1-2 good series.  The movie selection makes me wonder how they stay in business.

TV show selection isn't horrible but there are almost no free movies I want to watch. I mainly have Prime for the shipping anyways.

If you buy a lot of stuff and select the slow shipping you get a $1 credit toward movie, music, or book downloads.  Divide up prime items into individual shipments and you will get even more.

Spent $2 worth of credit for a show and they gave me a $1 credit for "buying" the show.  Just happened with the first episode of the series.

Ive watched shows like Blazing Saddles and Mad Max for free and weeks later they wanted a $2.99 rental.

watch the stuff you want to watch while it's available, and keep an eye on the tech blogs that will update you every month what is coming and going from prime and netflix.

Nah.  I couldn't do that.  I bought it for the price advertised, not their fault they give it away later.  Besides, I get my money's worth out of Prime membership.
