I did a charity chili cook-off at work once. Never again.

Most people -almost all- can't tolerate chili any hotter than ketchup.

No matter how mild you go, you will hear complaints.  Pussies.

Good chili should not be a punishment to eat.

You can always put hot in a chili after it is made but it is hard to take it out once it is made.

I usually cook up my chili with Anchos and Guajillo Chiles.  If somebody wants it hotter than that then they can dump in the hot sauce or cayenne pepper to their satisfaction.

i'm not a macho chili-head. Trust me, I made it mild as it could be - unless I had left ALL the chiles out - because I worked with those people and knew what they were like.

I think they were really hoping for something more like Sloppy Joe filling instead of chili.
