What State/City are you in, OP? My town is doing a chili cookoff this weekend I believe, too bad I have to work.

Add ghost chilies, and ignore the anti-bean meatsauce crowd.

Company I once worked for was owned by a bunch of Louisiana boys. They had a 70 gallon cast iron pot they used for cooking gumbo for our company safety lunches.
That fucker was heavy!

I have never eaten Louisiana chili but if it taste as good as most Louisiana cuisine then it is damn good.

Maybe he is not weak minded and fixes his chili to suit his own taste and not by some arbitrary rules established by somebody else that probably doesn't know their ass from a hole in the ground. If you want somebody else to dictate to you how you should fix your food then fine. Evidently he doesn't worry about that. |

If you want to be in their contest then you have to play by their rules but that doesn't mean that there aren't other rules for other contest. Most Americans don't look up the rules established by other people when they fix their dinner, do they? |

Still waiting for pic of chili.
A pot of orange sauce is just... fail. |
