I'm almost 60 years old and I've never had a Philly Cheese Steak.
I really should remedy that but it's probably pretty hard to do in the middle of AZ.... Guess I'll try making one myself sometime this week, maybe I'll make two so I can try both cheeses and make my decision.

OP title fail.
It's just a "cheesesteak"; one word, no "Philly" or other geographical qualifiers. My NJ wife made sure I learned that lesson early in our relationship. |

As a Philly local, I'm going with either whiz or provolone....there is no other acceptable option. Fresh Amoroso rolls, fried onions.....sliced ribeye. Done. |

You don't pick a cheese by color...and even if you did, "yellow" is never the correct answer. There are only (2) cheeses that are authentic to cheese steaks and it's either Provolone, or Mozzarella. "Whiz" (which tastes similar to how it sounds) was created for TOURISTS, LIBERALS, & COMMIES |

View Quote There is a cheese steak place in SCOTTSDALE.....or at least there was when I was there half-a-dozen years ago. Found it late one night (they were open til at least midnight, maybe later...) when I got back to my hotel after a 14-hour day in the field and discovered room service had closed already. Took a cab and said "drive me down the main drag..." and the first place I saw open was this cheese steak joint... Wasn't bad for the middle of the desert in the middle of the night. |

View Quote My dad was born in Philly, went to Drexel, etc. His first business trip to Ohio, he asked for a cheese steak, the bartender brought out a steak with melted cheese on it. He has always specified a "Philly cheese steak" since that day. He has also never willingly gone back to Ohio. Kharn |

Wiz is not so authentic. If you go to Pats or Genos it is. But outside of those venues, white American cheese is customary.
White American Cheese Onions Mushrooms Sweet peppers Living on the plains. The trend at cheesesteak joints is to put bell peppers on their cheesesteaks. I can't recall them ever being offered when living in south Philly.
