Ok. First know what you are talking about; over easy, over medium, over hard. If you dont know what these are, you cannot start.



I like over medium. Thats the whites hard, the yolk soft/runny, but completely cooked on the outside.




Heat pan on med high. Add BUTTER, you fucking heathens. Allow it to start to brown, crack and drop the egg on the pan and dont break the yolk. Salt, pepper.




Immediately, toss a couple tablespoons of water in the pan, cover with lid. The steam will cook the top. Flipping an egg is for dummies.




After about 1-2 minutes, it will be done. Slide from pan onto buttered toast with just a touch of honey. You can also throw some bacon betwixt the egg and the toast, and also sprinkle some nice mild cheddar on top it you feel like it.

this...breaking a yoke means you fucked up... when you break the yoke we call that a light scrambled egg rather than scrambled eggs which are mixed in a bowl first....or skillet scramble where you mix them in the frying pan...

I appreciate your knowledge of cooking eggs being passed on to us,  who may or may not have started cooking eggs back in 62-63.   BUTTER???  Where the fuk is the OLIVE OIL OR BACON GREASE.

The way i was taught way back when was, drop egg[s] in frying pan that you just removed the bacon from. Crack egg[s] on side of pan, open egg[s] over bacon grease and drop in. Once egg[s] is in pan, spoon bacon grease over egg.  How you cook them from there depends how you like them.

Now a days it's Olive Oil or small dollop of bacon grease.  butter is for the toast, english muffin, hard roll, tortilla [ if green chili, chorizo and or other items are in use} There's nothing wrong with bacon eggs, sausage (insert type) with peppers & onions inside a warm buttered tortilla.

If that yolk ain't runny, you've cooked all of the flavor out of it.  The difference between a tremendous egg and a boring one can be less than a minute in the pan.

That describes a fucked up attempt at sunny side up.

Sub: Never heard of HP sauce. What's it like?

Fried egg does indicate a broken and cooked yolk.

Fried= broken yolk, flipped and fried till done

Over easy= flipped but whites not completely done

Over medium= flipped and whites done, yellow still as completely runny as possible

Over hard= flipped and yolk done completely but don't cook the egg till it's solid rubber hockey puck style.

Sunny side up is not flipped, intact yolk. Some will splash grease up on the egg to get the whites most of the way done.

Bacon grease is preferred. Sausage grease or butter is acceptable. EVOO is not a good flavor with eggs.

I'm an over medium guy unless making sammys then it's fried.

I toss a cover on the pan if I'm not flipping the egg so I don't have runny egg whites on top or an overcooked bottom. (this is for over easy...or apparently "medium")

Since you like pastrami...

Beat an egg and put it in a large pyrex type pan.  Dip two slices of bread in the egg to soak it up.  

Throw the bread in a frying pan with whatever fat you like.  I usually use olive oil but butter or bacon grease is great.

Toast the bread a bit in the frying pan and then use it to make a sandwich with hot pastrami.

Phenomenal.

Get your pan hot before putting in the grease. Rule to keep food from sticking especially in cast iron or sheet steel pans.
