When I was a kid, my dad worked for a trucking company that hauled for a few different grocery stores in the southeast. We got all kinds of goodies here and there when pallets would get busted up and smashed, since the store couldn't accept them, the driver would carry them back to the shop and the company would divvy things up amongst everyone who worked there, versus just throwing good products in the dumpster.

Temperature problems would be my first choice as to why he had to eat the cost of the cheese.
OP, cheese does freeze very well. I prefer to rap it in foil and then freeze it. You can freeze shredded cheese too. |

Real Italian buffalo mozzerella is so much better but you cannot get it in The US. Tastes like American mozzerella If you took the best mozzerella you've eaten And added real butter to it |

Christ, how many wood fired/coal fired pizza places are here in the US that use Italian buffalo mozzarella Italian cheese, deli meats, candies, etc... are far from a rare commodity Speed |

Still the best is buying it fresh in Italy. It's impossible to eat regular cows mozzarella after you've had buffalo mozzarella. |

Make a ton of fried mozzarella, I recommend frying 1/4 - 1/2 pound blocks. Slice the blocks around an inch thick, bread and fry. Serve with homemade marinara sauce and fresh bread rolls. Your life will then be complete
