"St Louis style" pizza though is an abomination and should not be called "pizza". |

That chicago stuff actually makes sense to be called pizza pie. it's ok but I'm a NY pizza person. I can make my own crust and it's very good crust. I'm still titrating my pizza sauce. I am thinking the base needs to be tomato sauce with about 10-20% tomato paste. That way you get a rich sweet tomato flavor. Straight tomato paste with water and spices is just too sweet. Plenty of garlic and light on the herbage. |

Sounds like that shitty school pizza I had in high school, foamy bread base, uninspired tomato sauce with black pepper for flavor, lots of government cheese because it's free and meets some government quota. Even as a 15 year old I hated that crap, I'd rather get a tuna or ham salad sammich. |

I spent the summer of 96 in St. Louis.
What they called "pizza" was actually served in a cookie sheet....covered with American cheese. Holy fuckin' shit, Batman. |

When we went there when I was older, I never drove because I didn't know the way. It's been a few years since then anyways. I hope they are still open, it's a family joint and my dad worked there as a teenager almost 40 years ago. |

I'd like to see them try to carve out some niche for themselves. The problem is that there's an identity crisis there where the city doesn't quite know what it wants to be so it's settled on being a "me too!" version of Chicago. What is actually positive about Chicago??? NOBODY wants to be like that shithole police state. Also, I tried it last year, there is nothing special at all about Chicago food. (went to most of the places Chicagoans I know said to) Its not horrible or anything, there is just nothing that stands out about it. STL pizza is an acquired taste (the provel cheese is anyway) but at least its unique. Chicago deep dish is just a bunch of standard sauce, meat and cheese put together. Disclaimer: I did NOT have Chicago thin crust, so that may be decent. I assume its not better than good NY style though. I don't necessarily have a lot of positives about living in St Louis, and it did decline when RR beat boats, but I have even less positive to say about Chicago. |

The crust is more of a thin crunchy cracker than the cafeteria wet bread "crust". Try it with an open mind, or not. I could care less. However, their are some drama lama's in here that make it out to be worse than pickled pig anus when in reality its pretty good. Its like comparing some really nice Italian family deli made Brooklyn slice of pizza to Pizza Hut, both are pizza but are totally different experiences. |
