Ok I got some cider w/P.S. In it.  I started a bread yeast starter. Should I let it go ,rack it then pitch my red star? Any help would be cool

Potassium sorbate is used for clearing wine. Once it is pitched, It won't kill off already active yeast, it prevents them for reproducing. After the yeast have no more sugars to consume they go dormant. The PS is a way to insure there is no carbonation in wine, and popping corks...

I would give it a try, but you may need a bigger than usual amount of yeast. Instead of 1 packet, make a starter of 3 or 4 packets. The yeast should eat the sugar and piss alcohol, they just won't reproduce, and it may take a couple of weeks or more for them to consume all the sugars.

Bread yeast wont make a very good cider

Get some of this and let it do its thing.

I used bread yeast for my first apple cider. It worked and tasted great.
