Got an all grain kit from Rebel for a Grain of Thrones Barley wine. They sent me Safale S-04 for the yeast.

I have various other yeasts at the house that I could use instead (Nottingham, Australian Ale yeast, etc).

Is S-04 good for Barley Wines?? This will be my first one.

I like S04. Floccs nice. Finishes clean. I cant comment on its alcohol tolerance, but I think Notty and S04 arent too far apart.
FWIW S04 is going in the pale ale im making this weekend.

I see in the "whats in your fermenter" thread you brewed the barley wine.
Which yeast did you go with?

What we here at Arfcom do best. Got both!

I ended up with too much wort (~7 gallons) so I split it between 2 carboys and put the Safale in one and Nottingham in the other.
