I've made an easy belgian wit before.



6 lbs wheat dme, enough hops to give some bitter, bitter orange peel, and obliterated coriander.  Usually finishes at 1.014 with Wy3944.



I was thinking about making a modification...Drop 1 lb of the dme and substitute 1 lb of orange blossom honey.  



Thoughts?  I was going for something with a lower finishing gravity but still has that classic wit flavor.

I didn't double check your substitution weights, but I love orange blossom honey in Belgian beers.

Last fall I made a trippel with orange blossom honey and it was delicious. In January I made 20 gallons of orange blossom mead and that should turn out great.

I like buying from Dutch Gold Honey when I need some honey.
